I wanted to do something to mark April first with my kids. Call it spring fever if you will. I put on my thinking cap and stumbled across this recipe and decided to have a go. I have been meaning to try my hand at individual portions of meatloaf for the kids so why not see if I could make it fun and fool them for April Fools Day. I used The Pioneer Woman’s Cajun Meatloaf instead of the one in the link because I just plain love it.
So here is how I did it. Mix up your favorite meatloaf, fill muffin tins until the meat is level with the top of each cup. Add your ketchup/honey glaze and cook at 400 F for 30-35 minutes. Set on top of paper towels then place in muffin papers.
For the topping I used McCain frozen sweet potato cubes. I figured it would be a great way to try sweet potatoes for the first time. I have to say that I was impressed. Fast easy and tasty. Cook them up according to instructions. Mash them with some milk and butter and then put them in a pastry bag with a wide hole or the large star. I couldn’t find mine, so I just cut a hole in a zip-lock baggy and spooned the sweet potatoes in. Squeeze the mashed mixture on top of the meatloaf and then garnish with grated cheese and parsley. Voila!
It was very easy, fast and the kids thought it was fantastic. Actually I don’t think they ever ate meatloaf with as much enthusiasm. I will be making this again for sure. Let me know if you try it. Did you get someone in your life?
